Shiitake illustrates the savory effect

The Umami Information Center describes shiitake as earthy and rich in umami compounds, with drying enhancing its savory contribution. Ordinary cultivated mushrooms also supply glutamate. These flavor descriptions concern food mushrooms; they are not evidence of a health effect. [1]

A powder label can describe very different ingredients

A ground culinary mushroom, a concentrated supplement extract and a seasoning with salt or other ingredients are different preparations. The species name and full ingredient list help explain why two products taste different. Stronger bitterness or a stronger aroma is not a validated potency test. [1]

Evaluate flavor in the intended dish

Imagine a plain shiitake powder and a salted mushroom seasoning are added to soup. Compare small amounts in the food and adjust the recipe’s other salt accordingly. Use only a product sold for the intended food use, and follow its cooking instructions; do not taste unidentified mushroom material. [1]
