Reference energy values

USDA SR Legacy reports 80 kcal per 100 g raw ginger root and 335 kcal per 100 g ground ginger spice. The ground form is more concentrated by weight, but that does not mean a pinch of spice contributes more energy than a large piece of fresh ginger. [1]

Keep the recipe separate

Candied ginger, sweetened ginger drinks and ginger biscuits include other ingredients. Their energy cannot be calculated from the fresh-root value alone. These historical figures are composition estimates; an actual packaged food needs its own label, serving size and preparation information. [2]

A hypothetical culinary calculation

Ten grams of fresh ginger gives about 8 kcal; two grams of ground ginger gives about 6.7 kcal. These chosen masses illustrate why the serving matters. They are not equivalent flavor quantities or a claim that replacing one with the other changes weight or health outcomes. [1]
