Selected mushroom records

USDA SR Legacy lists raw white mushrooms at 22 kcal per 100 g, boiled drained white mushrooms without salt at 28 kcal, raw shiitake at 34 kcal and dried shiitake at 296 kcal. These are separate food entries, not measured stages of one cooking experiment. [1]

Count what was added

A sautéed dish can include oil, butter, cream or other ingredients. The plain boiled-mushroom entry does not include them. Likewise, a100 g dried portion is not equivalent to 100 g fresh mushrooms because water content differs. Use a matching recipe or sum its components when estimating the finished dish. [2]

A hypothetical plain portion

At150 g, boiled drained white mushrooms give about 42 kcal using this record. Ten grams of dried shiitake gives about 29.6 kcal before other ingredients. These calculations retain preparation and edible mass; neither is a weight-loss promise. [1]
