Separate ordinary tofu from fermented soy
Harvard Nutrition Source lists ordinary tofu among unfermented soy foods, while miso, natto and tempeh belong to its fermented group. A specialty fermented bean-curd product is a separate preparation; its existence does not make every tofu block fermented. [1]
Fermented still does not settle the probiotic question
For a probiotic claim, identify live organisms with evidence for a relevant health benefit. Preparation, heating and storage matter. A package that says fermented or cultured without identifying an evidence-supported organism does not provide the same information as a studied probiotic product. [2]
Use tofu for the food role it actually fills
Tofu can supply soy protein regardless of a probiotic claim. Imagine selecting tofu for dinner: compare the actual portion, protein and preparation, and handle the product according to its package. You do not need to turn a useful protein food into a microbial treatment to justify eating it. [1][3]
| Situation | Interpretation |
|---|---|
| Plain tofu | Generally unfermented soy food |
| Specialty fermented bean curd | Check the specific preparation |
| Protein source | Different question from probiotic efficacy |
